POACHED FISH 
1 lb. haddock, whiting or any lean fish
2 tbsp. minced green onions
2 1/2 tbsp. flour
3 tbsp. butter
1/2 c. cream (milk will do, too)
Salt & pepper
1/2 c. dry white wine
1/2 c. water

Butter baking dish 2" deep. Sprinkle with 1/2 the onions. Season fish with salt and pepper. Arrange in single layer, sprinkle with remaining onions and dot with butter. Cover with wine and water and bring to a simmer. Cover and place in oven preheated to 350 degrees for 8 to 10 minutes. Do not over cook. Remove fish to plate and make a sauce from flour and butter blended together and whipped into the juice in the baking dish. Add cream and bring to a boil. Season with salt and pepper and lemon. Spoon over fish and serve.
