PORK SATE 
PORK AND MARINADE:

2 lb. pork loin
3/4 c. red vinegar
1/2 c. brown sugar
1/3 c. soy sauce
3 cloves garlic, crushed, or 2 tbsp. ground garlic
1 tsp. salt
1 tsp. black pepper
1/2 lemon, juiced

Clean and cut pork loin in 1-inch cubes. Prepare marinade by combining vinegar, garlic, lemon juice, sugar, soy sauce, salt, and pepper. Marinate pork in mixture for 16-24 hours in the refrigerator.

Thread about 8-10 skewers with small pieces of pork and broil or grill over hot coals, turning once or twice, until all sides turn golden brown.

Serve with Sate Sauce.

NOTE: You can substitute beef or chicken for the pork.

SATE SAUCE:

1 1/4 c. peanut butter
1/2 c. soy sauce
1/3 c. water
1/3 c. sugar
1 tsp. cayenne or Tabasco
2 cloves garlic, minced
1 tbsp. chopped shallot
1 tsp. minced fresh ginger
2 tbsp. sesame oil
1/3 c. lemon juice

Mix peanut butter, soy sauce, water, sugar, and pepper in a saucepan. Boil and stir until mixture blends and thickens. Set aside.

Saute garlic, shallot, and ginger in oil. Add lemon juice and peanut butter mixture. Heat for 2 minutes or until sauce thickens to preferred consistency, adding a little water if necessary.
