1 lb. ground beef 1 sm. onion, chopped 1 lb. can creamed corn 1/4 c. prepared barbecue sauce 1/2 tsp. salt 1 env. instant mashed potatoes 1/2 c. cubed sharp cheese 1 tbsp. prepared yellow mustard Brown ground beef and onions in large skillet; drain excess fat. Stir in corn, barbecue sauce and salt; heat to boiling. Turn into 1 1/2 quart casserole. Prepare the mashed potatoes as directed on package. Stir in cheese cubes and mustard. Spoon around edge of casserole. If desired, sprinkle with additional shredded cheese. Bake at 400 degrees for 20-25 minutes. Serves 4-6. |
