BROCCOLI & CHICKEN CASSEROLE 
1 (8 oz.) pkg. herb stuffing mix
1 stick butter
1 c. chopped onion
2 (10 oz.) pkg. frozen broccoli, thawed
1 c. chopped celery
2 c. cooked chicken
8 oz. Velveeta cheese (10 slices)
1 can cream of chicken soup
1 c. cooked rice

Put 1/2 stuffing mix in a greased 2 quart dish. In a pan, melt butter. Add celery, onion, and broccoli, cooking until tender. Add chicken, rice, cheese and soup. Spread mixture over the stuffing. Top with remaining stuffing. Cover and bake 40 minutes at 325 degrees. Uncover and bake 10 minutes or until brown.
