BRYAN'S STUFFED POTATO CASSEROLE 
4 lg. white baking potatoes (peeled and cut up)
1 lg. yellow onion, chopped
4 shallots, chopped
1 stick butter
Salt
1 lb. cheddar cheese, grated
2 tbsp. Zatarain's liquid crab boil
Cayenne pepper
1/4 tsp. thyme (optional)

Peel and cut up potatoes and boil with liquid crab boil; salt and cayenne pepper to taste. Drain and set aside. Saute onion and shallots in butter until soft, then fold in the potatoes, 3/4 of the grated cheese and a pinch of thyme.

Transfer the entire mixture to a Pyrex or Corning Ware dish (not too deep). Top with remainder of cheese and bake in 350 degree oven for 25 minutes or until bubbling on sides and the cheese melts.

Serve with steak, fish or chicken. This is a spicy dish depending on how much crab boil and cayenne pepper you use.
