CARROT - PINEAPPLE CAKE | |
1 1/2 c. all-purpose flour 1 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 2/3 c. salad oil 2 eggs 1 c. finely shredded carrot 1/2 c. crushed pineapple (with syrup) 1 tsp. vanilla Sift together into large mixing bowl flour, sugar, baking powder, baking soda, cinnamon, and salt. Then add salad oil, eggs, carrots, pineapple, and vanilla. Mix until moistened; beat at medium speed with electric mixer for 2 minutes. Bake in greased pan and lightly floured 9 x 9 x 2 inch in moderate oven (350 degrees) for about 35 minutes or until done. Cool 10 minutes; remove from pan. Cool. Frost with cream cheese frosting. |
