OATMEAL BUTTERSCOTCH COOKIES 
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 c. shortening
3/4 c. brown sugar
3/4 c. granulated sugar
2 eggs
1 tsp. vanilla
1 c. nut meats, chopped coarsely (walnuts)
2 c. quick oatmeal
1 (6 oz.) pkg. butterscotch chips

Sift flour and sift again with salt and soda. Cream shortening and sugars. Beat in eggs and vanilla. Stir in dry ingredients, quick oatmeal and butterscotch chips. Drop by spoonfuls on cookie sheet and bake at 350 degrees for 5-10 minutes. Yields: 7-8 dozen. Keep in tight jar to retain crispness.
