INDIAN RELISH 
12 green tomatoes
12 peeled cored tart apples
3 peeled onions
5 c. vinegar
1 tsp. red pepper
3 tsp. ginger
1 tsp. turmeric
1 tsp. salt

Put green tomatoes, apples and onions through a food chopper or chop until very fine. Boil the next 6 ingredients. Add the chopped ingredients. Simmer for 1/2 hour. Pack the relish in sterile jars. Seal and process for 15 minutes in boiling water bath.

Makes about 4 quarts.
