CANNED APPLE FILLING 
1 c. cornstarch
4 1/2 c. sugar
2 tsp. cinnamon
2 tsp. nutmeg
1 tbsp. salt

Mix together and place in large kettle. Stir in 10 cups water. Bring to boil until thick and bubbly. Add 3 tablespoons lemon juice. Pack tart apple slices into jars, leaving 1 inch space at top. Fill jars with hot filling, leaving 1 inch head space. Process in hot water bath; pints 15 minutes; quarts 20 minutes. For apple pie, just open jar and pour into crust and bake.
