BRUNCH BURRITOS | |
1 lg. green pepper, chopped 2/3 c. chopped onion 2 tbsp. butter 8 eggs, beaten 1 c. shredded cheese 1 1/2 c. picante sauce 8 (8 inch) flour tortillas Sour cream (optional) Cook green pepper and onion in butter in 10 inch skillet until tender. Combine eggs and cheese; add to skillet. Cook over medium heat, stirring frequently, until eggs are set and cheese is melted. Heat picante sauce until warm. Dip each tortilla into picante sauce. Spoon about 1/2 cup egg mixture onto center of each tortilla. Fold 2 sides over egg mixture; fold ends under and place in baking dish. Bake at 350 degrees until hot; top with sour cream. Makes 6-8 servings. |
