SUGAR COATED PECANS 
1 pound of pecans
1 cup sugar
1 1/2 tablespoon of cinnamon
1 egg white (room temperature)

Mix sugar and cinnamon in a bowl. Whip egg white in a separate bowl, put nuts into whipped egg white, then roll in sugar and cinnamon mixture. Place on cookies sheet and bake at 300°F for 1 hour. Be sure and stir pecans every 15 minutes.
