NORMA'S GAZPACHO SALAD 
2 c. tomato juice, heated to boiling with 1 stalk celery and 1 onion
1 tbsp. low salt Worcestershire sauce
1 pkg. lemon Jello (sugar free)
1 tsp. horseradish
1/2 c. celery, diced fine
1/4 c. onion, diced fine
1 tsp. dill weed
1 tbsp. lemon juice
1 cucumber, peeled, seeded, and chopped

Heat tomato juice with 1 stalk celery and 1 onion until boiling. Remove celery and onion. Add lemon Jello and stir until it is dissolved. Add all other ingredients; mix well and refrigerate until set.
