BREAKFAST QUICHE | |
9 inch pastry shell 6-8 strips bacon 1 sliced onion 1 1/2 c. (1/2 lb.) Swiss cheese 2-3 eggs 1 1/2 c. light cream 3/4 tsp. salt Cayenne pepper White pepper Nutmeg 1 tbsp. salted butter Fry bacon until crisp and crumble. Saute onions in bacon fat. Cover bottom of pastry shell (partially baked) with bacon crumbs and sauteed onions. Add 1/4 cup grated cheese (about). Add beaten eggs, cream and spice mixture. Top with remainder of cheese. Pour melted butter over top. Bake 35-40 minutes at 375. I add mushrooms. You can also add bits of chicken or whatever! Serves 8. |
