MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can cherry, peach, blueberry or apple pie filling
1/2 c. sliced nuts (optional)

Line cupcake pans with liners. Place a vanilla wafer in bottom on each liner. Beat cream cheese, sugar, eggs, lemon juice and vanilla until fluffy. Fill liners 2/3 full with mixture. Bake at 375 degrees for 15 to 20 minutes. Top each with spoonful of pie filling (and nuts). Chill.
