MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling, cherry or your favorite

Line cupcake pans with the 24 liners, place a vanilla wafer in each. Beat cream cheese, sugar, eggs and vanilla until fluffy. Fill liners 3/4 full with cheese mixture. Bake in oven for 15 minutes at 375 degrees. Top each with a spoonful of filling. Chill in refrigerator.
