SHEILA'S EGGPLANT SANDWICH 
EGGPLANT:

1 large eggplant
2 eggs
all-purpose flour
breadcrumbs
oil, for frying

SUGGESTED TOPPINGS:

provolone cheese
ham
mushroom
green pepper
onion

Slice eggplant lengthwise about 1/3-inch thick. Dredge in flour then in egg and then bread crumbs. Fry in oil on both sides. Remove from pan and let cool.

Next take a slice of cheese and put on first eggplant slice then add ham, mushroom, green pepper and onion. Place on baking sheet and bake in preheated 350°F oven and enjoy!
