NEVER FAIL HOLLANDAISE SAUCE 
1/2 c. butter
2 egg yolks
1/2 tsp. salt
Sprinkle of paprika
1 tbsp. lemon juice

Melt butter; beat eggs until thick and creamy. Add salt and pepper. Add 3 tablespoons butter, one drop at a time. Add the rest of the butter slowly, alternating with lemon juice.
