HOT PEPPER SAUCE 
1 1/2 c. chopped onion
1 c. hot banana peppers or 1/2 c. jalapeno peppers
2 qts. fresh tomatoes or 2 pts. canned tomatoes, drained and chopped
1 1/2 tbsp. salt
1 1/2 tbsp. garlic
1 tbsp. oregano
1 tbsp. lime or lemon juice

Combine above ingredients and cook uncovered on medium/low heat for 1 hour. Use on nachos, chili, Mexican food.

For a more mild sauce use half banana peppers or half jalapeno peppers or remove seeds from jalapeno peppers.
