QUICHE KENEPURU | |
1/2 lb. flaky pastry FILLING: 2 eggs 2 tsp. mayonnaise 1 level tbsp. corn flour Salt and pepper 1/2 c. cream or top milk Good pinch of marjoram 1 sm. onion, very thinly sliced 3 tbsp. grated cheese 8 mussels, chopped (these may be either cooked or raw) Line a flan ring or pie dish with the pastry. Beat the egg until blended, mix the corn flour to a paste with a little of the cream, add remaining cream, salt, pepper, marjoram and mayonnaise; mix to blend. Sprinkle the onion and cheese on the pastry, add the chopped mussels (the pieces should be bite sized). Pour the egg mixture over the mussels. Bake at 400 degrees for 10 minutes, reduce oven temperature to 325 degrees and cook until filling has set when tested with a knife blade. Takes about 10 extra minutes. 6 servings. |
