BACON AND EGG ROLLS 
8 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper
1 lb. ground beef
16 bacon strips, diced
1 c. Cheddar cheese, grated
1/2 c. green pepper, chopped

Mix the eggs, salt, and pepper together. Set aside. Saute the bacon until it is crisp. Drain, reserving 2 tablespoons of bacon fat. Saute the ground beef in the bacon fat until it begins to brown. Remove from heat and add the cheese and green pepper. Mix well. Add the bacon to the beef mixture. Mix well. Place the 1/12 of the egg mixture in a well oiled pan over a medium flame and cook for 1 minute. Turn over and place 2 tablespoons of beef mixture onto the eggs and roll up. Serves 12.
