CHINESE SESAME NOODLES 
1 lb. dried noodles
4 scallions, finely chopped
6 tbsp. tahini or sesame seed butter
3 tbsp. vegetable oil (preferably Safflower)
3 tbsp. soy sauce

Boil the noodles for 7 to 8 minutes, rinse under running water, and drain. Serve as is in individual bowls. Serve the chopped scallions in a separate bowl. Mix the tahini, oil, and Soy sauce together in another bowl, so that diners may coat their noodles to taste.
