CHINESE CHICKEN SALAD 
2 chicken breasts, steamed, seasoned & shredded
1 head lettuce, shredded
3 stalks celery, diced
2 green onions, chopped
Bean thread noodles (or chow mein noodles)
2 to 3 tbsp. sesame seeds, toasted

DRESSING:

1/4 c. salad oil
1/4 c. sugar
1 tsp. salt
1 tsp. sesame oil
3 slices fresh ginger, minced fine
3 tbsp. rice vinegar
1/2 tsp. pepper
2 tbsp. lemon juice

Prepare dressing and chill. Heat a deep pan with oil and fry the bean threads. They will puff up immediately. Remove and drain. Prepare salad ingredients. Add dressing and bean thread noodles just before serving. Serves 6.
