CHICKEN CASSEROLE 
1 whole chicken, boned
2 c. chicken broth
1 can cream of chicken soup
1 1/2 c. cheddar cheese, grated
1 small onion
2 eggs, beaten
2 c. Ritz crackers, crushed
2 c. noodles, cooked
1 1/2 c. celery, diced

Cracker Crumb Topping:

1/2 c. Ritz crackers, crushed

Combine all ingredients in casserole dish. Sprinkle 1/2 cup Ritz crackers over top, just before baking. Bake 1 hour at 350°F. This can be frozen, but put cracker crumbs on just before baking.

Variation: Instead of chicken, try turkey.
