BLACK WALNUT COFFEE CAKE 
1 c. butter
1 c. buttermilk, warm
2 c. brown sugar
2 eggs, beaten
2 c. self-rising flour
1 tsp. baking soda
2 tbsp. cola
1 tsp. vanilla extract

Preheat oven to 350 degrees. melt 1 cup butter. Stir in buttermilk, brown sugar and eggs. Combine flour and soda and add to buttermilk mixture; mix well. Add cola and vanilla. Bake in greased 9 x 13 inch baking dish for 25 minutes. 15 servings.

TOPPING:

1 1/4 c. butter
1 c. brown sugar
6 tbsp. evaporated milk
1 c. walnuts, chopped

Melt butter. Add remaining ingredients, mix well. Spread on hot cake and broil until bubbly. Serve warm.
