OATMEAL CRISP COOKIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 beaten eggs
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
3 c. quick oats
1/2 c. chopped nuts
Chocolate chips (optional)

Thoroughly cream shortening and sugar; add beaten eggs and vanilla. Beat well. Add sited dry ingredients, oats, nuts, chocolate chips (if desired). Mix and form into long rolls. Chill thoroughly (may be frozen).

Cut 1/4 inch thick. Bake on ungreased sheet, moderate oven at 350 degrees for 10 minutes. May be "dropped" if desired.
