ZUCCHINI BREAD | |
1 c. salad oil 3 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini 2 tsp. vanilla extract 3 c. self rising flour 1 tsp. salt 3 tsp. ground cinnamon 1 c. chopped walnuts, pecans or raisins Combine oil, eggs, sugar, zucchini, and vanilla. Stir in flour, salt, cinnamon. Do not beat. Stir in nuts. Spoon batter into 2 well greased 8 1/2 x 4 1/2 loaf pans. Bake at 325 degrees for 1 1/2 hours or until done. |
