CROISSANTS 
1 c. milk, scalded
1 c. butter
1 pkg. dry yeast or cake yeast
1/2 c. & 1 tbsp. sugar
1/2 c. warm water
2 eggs
1/2 tsp. salt
4 c. flour

Melt butter in hot milk; cool. Dissolve yeast with 1 tablespoon sugar in warm water. Beat eggs; add 1/2 cup sugar; mix together. Combine milk mixture, yeast and salt. Stir in unsifted flour; dough will be sticky. Cover with plastic wrap; refrigerate overnight.

Next morning let rise 4 hours. Divide into 4 portions. Roll out like pie crust. Cut into 8 wedges. Roll each starting with wide edge. Place point side down in greased pan. Cover; let rise 4 hours. Bake at 325 degrees until lightly browned.
