GINGERED APPLE ALMOND SALAD 
4-6 apples
1/2 c. whole almonds
3 limes, juiced
1-2 pieces ginger, peeled and finely chopped
2 tbsp. honey

Use your favorite eating apples, cored and cut into chunks.

Mix dressing, stirring lime juice and honey until dissolved. Add ginger and pour over apples and almonds. Mix well to coat apples and refrigerate for 1-2 hours. Mix again before serving.

This salad keeps well for several days. I like to use a combination of Granny Smith and Winesap apples. I do not peel the apples, but if you prefer to do so, have the dressing ready as you are preparing the apples so you can sprinkle it on the apples so they don't turn brown.
