MANICOTTI 
8 manicotti macaroni
2 c. (1 lb.) dry cottage cheese
1 egg, slightly beaten
1/3 c. grated Parmesan cheese
1/4 c. finely chopped parsley
1/2 lb. ground beef
1/3 c. chopped onion
2 med. cloves garlic, minced
1 tsp. basil, crushed
1 tsp. oregano, crushed
1 can (15 oz.) tomato sauce
1 can (6 oz.) tomato paste
1/2 c. water
2 slices (3 oz.) mozzarella cheese, cut into 8 triangles

Cook manicotti until tender; drain. Combine cottage cheese, egg, Parmesan and parsley; fill manicotti. Arrange manicotti in shallow baking dish (12 x 8 x 2 inches).

In saucepan, brown meat and cook onion, garlic, basil and oregano until onion is tender. Stir in tomato sauce, paste and water. Pour over manicotti. Bake at 350 degrees for 35 minutes. Top with mozzarella. Bake until cheese melts. Makes 4 servings.
