BAKED POTATO SALAD 
8 med. sized potatoes, cooked and diced
1 lb. Velveeta cheese, cubed
1 c. Hellmann's mayonnaise
1/2 c. diced onions
Add salt and pepper for desired taste
1/2 lb. bacon, fried and cut into sm. pieces

(May use bacon bits found on grocery shelf also).

Combine and stir the first 5 ingredients together in a large bowl. Place the above in a large casserole or large baking dish. Bake at 325 degrees for 1 hour or until bubbling and golden brown.

I have found it is best to sprinkle the bacon over the mixture approximately 5 minutes prior to removing from oven to avoid burning. Enjoy!!
