1/3 c. brown sugar, packed 1 c. flour 1/2 c. chopped nuts 1/3 c. melted butter 1/2 tsp. cinnamon Mix together and work with hands until thoroughly mixed and crumbly. Remove (1) cup of crumbs to be used later for topping. Place remainder in 8 inch square pan and press firmly. Bake in 350 degree oven for 12-15 minutes. FILLING: Ingredients for filling at room temperature. 1 (8 oz.) pkgs. cream cheese 1/4 c. sugar 1 egg 1 tsp. lemon juice 2 tbsp. milk 1 tsp. vanilla Beat all the above listed together. Pour onto baked crust and top with reserved crumbs. Return to oven for about 25 minutes. COOL THOROUGHLY in refrigerator at least 1 hour before cutting into squares. Yields about sixteen 2 inch squares and about twenty-four 1 1/2 inch squares. Dust with powdered sugar. This recipe can be safely doubled. |
