BROCCOLI MEAT LOAF | |
2 1/2 lbs. lean ground beef 2 pkgs. frozen chopped broccoli 1 med. bell pepper, chopped sm. 1 med. onion, chopped sm. 1 c. fresh mushrooms, chopped sm. 1 pkg. Lipton Onion Soup Mix Salt and pepper 2 eggs 2 clove garlic, chopped fine 1 c. bread crumbs 1/4 lb. sliced ham (Virginia ham) 1/4 lb. sliced cheese (either Provolone, Swiss or American - use your favorite) Combine ground beef, peppers, onions, mushrooms, onion soup mix, eggs, garlic, bread crumbs, salt and pepper. Between 2 sheets of wax paper, roll out meat mixture into a rectangle approximately 1/4 - 1/2 inch thick to the size of a large cookie sheet - approximately. Remove top sheet of wax paper and spread out semi- frozen broccoli (do not cook broccoli or let thaw completely). Layer ham on top of broccoli covering entire surface. Starting at one end lift wax paper and meat and roll up into a log. (Remove bottom layer of wax paper as you roll.) Place in shallow baking pan and bake at 350 degrees for 1 1/2 hours. The last 15 minutes of cooking layer cheese on top. Note: For an added holiday touch you can add red peppers instead of green bell peppers. |
