ORANGE STREUSEL CAKE | |
1 pkg. dry yeast 1 1/4 tsp. powdered sugar substitute, divided 1/2 c. warm water 2 egg whites 2 3/4 c. all purpose flour, divided 2 tbsp. butter, melted 2 tbsp. orange marmalade (low-cal) 1/2 tsp. salt Vegetable cooking spray 1 tbsp. grated orange rind 1 tbsp. unsweetened orange juice Dissolve yeast and 1/4 teaspoon sugar in warm water. Let stand 5 minutes. Add egg; add 1 cup flour, 2 tablespoons melted butter, marmalade, and salt. Beat until smooth. Gradually add 1 1/4 cup flour to make soft dough, stirring until smooth. Knead dough until smooth, about 10 minutes. Put dough in greased bowl turning to grease all sides. Cover and let rise in warm spot about 50 minutes. Punch dough down. Press into 9 inch baking dish. Spray with cooking spray. Combine remaining 1 teaspoon sugar, 1/2 cup flour, 1/4 cup melted butter, orange rind, and orange juice; stir well. Sprinkle over dough. Cover; let rise in warm spot about 25 minutes. Bake at 375 degrees for 25-30 minutes or until wooden pick comes out clean. Serve warm. 12 servings. |
