PECAN CHEESE CAKE | |
1 1/2 c. graham cracker crumbs 1/4 c. sugar 1 tsp. nutmeg 1 tsp. cinnamon 8 oz. melted butter or I Can't Believe It's Not Butter Mix together. Press into springform pan or sheet pan, 9 x 13 inch. TOPPING: 1/2 pt. sour cream 1/4 c. sugar 1/2 tsp. vanilla Mix well. BATTER: 40 oz. cream cheese (lo cal can be used) 1 zested lemon rind 6 eggs or egg beaters 1 3/4 c. sugar 1/4 c. flour 1/4 c. cream or canned skim milk Mix cheese, zested rinds and cream cheese for 2 minutes. Add remaining ingredients. Mix well. Pour into crust. Bake 10 minutes at 350 degrees - 1 hour at 250 degrees. Level tops. Peel off to level top. Add topping, 1/4 cup pecans (chopped). Bake another 10 minutes in 400 degree oven. Add another 1/4 cup nuts. |
