ZUCCHINI CAKE 
3 c. grated squash
3 c. sugar
1 c. chopped nuts
1 1/2 c. cooking oil
1 1/2 tsp. cinnamon
4 eggs
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

FROSTING:

3 oz. cream cheese
1 tsp. vanilla
2 c. powdered sugar
1/4 c. butter

Mix all ingredients together for cake. Pour into greased and floured 13 x 9 inch pan. Bake at 300 degrees for 1 1/2 hours, checking after 1 hour.

For Frosting: Cream butter and cheese. Add vanilla and sugar. Frost while warm, not hot. Best if kept in refrigerator.
