ANN'S FAVORITE POUND CAKE 
4 c. flour
3 c. sugar
1 tbsp. baking powder
1 tsp. salt
1/2 lb. butter (see note)
1/2 lb. butter (see note)
8 lg. eggs
1 c. milk
1 tbsp. pure vanilla extract, or flavoring of your choice

In large mixer bowl, combine all ingredients. Beat on medium speed for a few minutes to combine. Scrape down sides of bowl and beat for 10 minutes. Pour batter into greased and floured 10-inch tube pan. Bake at 350 degrees for 60 - 70 minutes, or until cake tester comes out clean. (As an alternative, cake may be baked in a 9 x 13 inch pan for 80 - 90 minutes or until cake tester comes out clean.) Makes 16 to 20 servings.

NOTE: Proportions of shortening totaling one pound, can be varied to taste. It is recommended using 1/3 to 1/2 pound of butter and the rest butter. Also, the shortening, eggs and milk MUST be at room temperature if the batter is to mix properly.
