NO FAIL FRENCH BREAD
1/2 c. warm water
2 pkgs. dry yeast
2 c. hot water
3 tbsp. sugar
1 tbsp. salt
1/3 c. melted shortening
6 c. flour
1 egg white, beaten
Sesame seed (optional)

Dissolve yeast in warm water. In large glass mixing bowl combine hot water, sugar, salt, shortening and allow to stand until lukewarm, add dissolved yeast and 3 cups flour, beat with wire whisk until smooth and well blended. Add remaining flour to make soft dough that can still be mixed with wooden spoon. Leave spoon in batter and allow dough to rest 10 minutes. Stir batter down and let rise 10 minutes again. Repeat this process until done 5 times.

Turn dough out onto floured board and knead only enough to coat dough with flour so it can be handled. Arrange each lengthwise on greased cookie sheet. Brush top with beaten egg white and sprinkle with sesame seeds. With sharp knife cut the top of each loaf approximately 1/4" diagonally about 3 times. Let rise until double in bulk, about 30 to 60 minutes. Bake at 400 degrees for 35 minutes.

Makes 2 loaves.
