FISH PATTIES 
1 c. fish, cooked in pressure cooker according to directions
2 c. cooked rice (may be left over) or you can use bread crumbs or softened
bread crusts
Salt and pepper
1 tbsp. minced onion
2 eggs, beaten with fork
1 tbsp. cooking oil

Flake fish; remove larger bones. Combine ingredients. Mix lightly. Form into patties and fry until light brown. Drain on absorbent paper. Can be made up ahead of time and frozen.
