BANANA NUT MUFFINS 
Cream together:

1/2 c. shortening
1 egg
1/2 tsp. baking soda
1 1/2 c. flour
1/2 tsp. baking powder
1/4 cup sugar
1 c. bananas, mashed
1/2 c. nuts

Do not overmix.

Fill muffin tins 3/4 full.

Bake 12-15 minutes at 350°F. You can add 2 tablespoons coconut for added moistness.
