CHEESE BAKED BEANS 
1 c. chopped onion
2/3 c. green pepper
1/4 c. butter
2 (1 lb. 2 oz.) jars baked beans
1 c. catsup
2 c. shredded Monterey Jack cheese

Preheat oven to 350 degrees. Saute onion, green pepper and butter. Add beans, catsup and cheese. Bake in 2-quart casserole dish about 30 minutes until bubbly. Garnish with 1/2 cup additional shredded cheese.
