CHICKEN WINGS 
2 lbs. chicken wings, cutting at each joint
2 tbsp. vegetable oil
1 (10 oz.) can enchilada sauce
1 envelope taco seasoning mix
1/4 to 1/2 c. Jalapenos, finely chopped

Preheat oven to 350 degrees. In skillet fry wing pieces in oil until slightly brown. Remove from skillet and drain on paper towel. Mix enchilada sauce, taco seasoning and jalapenos in 12 x 7 x 2 inch baking dish. Place wings in sauce. Bake 30 to 35 minutes or until chicken is tender, turning once.
