MANICOTTI SHELLS 
1 pkg. manicotti shells
1/4 lb. grated Mozzarella cheese
Spaghetti sauce

CHEESE FILLING:

15 oz. Ricotta cheese
1 beaten eggs
1 tbsp. parsley
2 tsp. sugar
Salt and pepper
3 tbsp. Parmesan cheese

Fill UNCOOKED shells with combined ingredients above. Pour small amount of spaghetti sauce in bottom of baking dish, arrange filled shells in single layer, side by side. Completely cover shells with sauce.

Cover tightly with foil and bake at 400 degrees for 40 minutes. Uncover and sprinkle with grated Mozzarella cheese; bake 5 to 10 minutes longer. May be made ahead.
