VEGETABLE CASSEROLE 
1 large can mixed vegetables
1 can whole grain corn
1 can peas
1 can water chestnuts, sliced
2 c. mild cheese
1/2 c. chopped onions

Mix all ingredients with 1 cup mayonnaise. Put in baking dish. Crumble 2 tubes Ritz crackers and mix with 2 sticks butter that has been melted. Sprinkle top.

Bake at 400°F for 20 minutes.
