CANDIED CARROTS 
7 med. carrots
1 tbsp. brown sugar
1 tsp. cornstarch
1/4 tsp. ground ginger
1/4 c. orange juice
2 tbsp. butter
1/4 tsp. salt

In a small saucepan, add sugar, cornstarch, ginger, salt and orange juice and cook stirring constantly until mixture is thickened. Boil for 1 minute. Remove from stove and stir in butter. Pour over cooked carrots. Serves six.
