OVEN-FRIED CHICKEN 
1/4 c. butter
1/2 c. cracker meal
1 tsp. salt
Dash pepper
2 lbs. chicken drumsticks

About 1 hour before serving:

Preheat oven to 400 degrees F. In 12x8 inch baking dish, melt butter in oven. On waxed paper, mix cracker meal, salt and pepper. With pot holders, remove dish from oven. With tongs, roll drumsticks in melted butter, then roll in crumbs to coat all sides; return to dish. Bake 40 minutes or until drumsticks are fork tender. Makes 4 servings.
