CHEESE LATKES (PANCAKES) 
1 lb. cottage cheese
2 to 3 tbsp. sour cream
3 eggs
2 to 3 tbsp. flour

Mix the above ingredients thoroughly by hand. Warm skillet with butter on a slow fire until the butter bubbles. Then spoon latkes into warm skillet, allowing room for spreading. Turn latkes over when they move easily with a spatula. When golden brown remove from skillet and place in dish. Serve warm with your favorite jam or sour cream.
