CHICKEN PARMESAN 
2 lb. roasting chicken, cut up
1 egg
2 tbsp. water
1/2 c. flour
3/4 c. grated Parmesan cheese
Salt and pepper to taste
1 tsp. oregano
3 1/2 tbsp. melted butter

Wash chicken pieces. Beat egg and water in shallow bowl. In another bowl, combine flour, 1/2 cup grated cheese, salt, pepper and oregano. Dip chicken in egg, then in flour and cheese mixture. Put chicken in 2 1/2 quart casserole and pour melted butter over it. Bake in preheated oven at 400 degrees for 45 minutes, brushing occasionally with butter. Before serrving, sprinkle with remaining Parmesan cheese.

Serves 3 to 4.
