4 c. zucchini
1/3 tsp. salt
1 1/2 tsp. apple pie spice
1/4 c. flour
2 eggs, beaten
1/4 c. concentrated lemon juice

Combine zucchini, salt, spices, flour and beaten eggs. Put mixture into a pie shell. Cover with top crust. Bake at 400 degrees for 1 hour or until done.

Make pie crust using 2 cups flour.

P.S. Sprinkle a little sugar over top of pie before baking.
