CANDIED YAMS 
4 lbs. yams
2 c. sugar
2 c. water
1/2 c. cinnamon red hots
4 pats butter

Peel yams and cut into serving pieces. Place in saucepan with plenty room for boiling. Add sugar, water, red hots and butter. Start hot heat under pot for 10 minutes. Reduce heat and simmer until candied. You can also bake these if you are using your oven.
