POACHED SALMON WITH MUSTARD
SAUCE
 
Serves 4.

1 1/4 to 1 1/2 lb. salmon fillet
1/4 c. water

SAUCE:

1 tbsp. sugar
1 tbsp. chopped fresh or 1/2 tsp. dried dill weed or tarragon
2 tbsp. Dijon mustard
2 tbsp. vegetable oil
1 tbsp. vinegar

Pour water over fish. Cover tightly and microwave on high 7 to 10 minutes. Rotate after 4 minutes. Let stand covered 3 minutes. Whisk all sauce ingredients. Serve alongside.

Since microwave ovens vary in power, you may need to adjust your cooking time.
